We were not mistaken in the title: it is the wine of tomatoes that is brewed today in the Charlevoix region, in Domaine de la Vallee du Brasque. To learn all about the production of this amazing wine, you must go to Belgium in the distant 1938. It was then that the amazing idea of ​​producing wine from ripe tomatoes came to the mind of Pascal Miche's great-grandfather.

 1. Pascal Miche, a former butcher who immigrated to Canada from Belgium, said his tomato product was the first such wine to be commercially successful. After he launched his project three years ago, he sold 34,000 bottles a year.
The Canadian took advantage of his great-grandfather's family recipe, which has been kept secret for four generations.

2. The winemaker is enthusiastic about his job, choosing tomatoes with the same care that winemakers pick grapes from. Tomatoes then go through the same stages as kneading, soaking, fermenting and pressing. It produces two types of wine: dry and velvet, which can be compared with the sweet Pinot de Charentes.

Omerto wine is now sold for $ 25 per bottle of 375 ml, and can only be found in a few Quebec and Manitoba stores. The winemaker himself is going to expand sales in the United States, France, Germany, Luxembourg and the Netherlands.

7. Tomato wine recipe (source - net)
Structure:
4 kg of tomatoes
1.2 l of boiling water a
pinch of salt
4 cups of sugar
1 tbsp. yeast
juice 2 lemons
After washing the tomatoes, then chop, sprinkle with salt. Then pour boiling water and squeeze the oppression. In this form, hold 3-4 days, then filter. Add sugar, yeast and lemon juice. We put in a warm dark place for fermentation, not forgetting to follow this process. When the bubbles ceased to stand out, mix. Then we leave alone for 3-4 days to let the sediment settle. After filtering through several layers of gauze and pour into the barrel. We seal it and put it for six months in a cool dark place.
Finally, bottled, corked and cleaned for several months.
